Tonight we celebrated. We booked our trip to Italy for June 2020!!
I consciously chose food that was healthier tonight. We had burrata (fresh mozzarella with balsamic vinegar, pesto and fresh tomatoes) to start. I had mahi mahi with a gluten free pasta and fresh basil, Parmesan and tomatoes in a white wine sauce and we shared a flourless chocolate cake for dessert.
As much as I LOVE to share pictures of our food, tonight we spent time together. We talked and laughed and, of course, took home gelato. *
Sometimes, you need a night to remind yourself you’re doing alright. *
(And if you’re ever in the Duluth area, I HIGHLY recommend Va Bene. We put it behind Wood Fire Cafe in Dublin, Ireland!)
